Pour créer cette cuvée, nous avons choisi une parcelle de vielle vigne de chardonnay situé sur la commune de Pierreclos. La vinification et l'élevage d'un blanc sans sulfite demande beaucoup de soins et d'attentions et cela commence à la récolte, il faut une vendange parfaitement saine. Une petite quantité de sulfite à tout de même été ajoutée avant la mise en bouteille afin d'assurer une bonne conservation. C'est un blanc plein de fraîcheur, aux notes d'agrumes et doté d'une belle longueur en bouche.
